Greetings-
I have collected old LasVgas and some AC casino chips over the years along with ashtrays, matchbooks, and swizzle sticks.
How canI know the current value and what is the best way if one decides to sell them to do so?

For Nevada chips, check out The Chip Rack (physical book).  It is published every one or two years and has values for chips based on sales on eBay and auctions around the world.  Many will tell you it's just a guide, and actual values will vary greatly.  You can buy yours here: http://thechiprack.com/.

For ALL chips and other casino stuff, eBay SOLD items is your best bet.  If you don't see any sold items for your particular item, then you'll just have to take a guess based on similar items that have sold.  To look up sold values, search for your item like normal, then scroll down on the left and check the "Sold Items" box.

For selling them, there are several venues for that:

1. Good old eBay (https://ebay.com) - pros include gazillions of eyeballs seeing what you have to offer.  Cons include fees and non-payers.
2. The Chip Board (https://thechipboard.com) - You can list your items for sale there.  Pros: a concentration of interested buyers awaits.  Cons: You don't know them and they don't know you.  Act accordingly.
3. Auction sites - There's no shortage of auction houses that will sell your items for you.  Pros: Lots of eyeballs.  Trusted broker for buyers/sellers.  Cons: Fees, often exceeding those of eBay, for both you and potential buyers.  Shipping charges can be outrageous and not disclosed before auction ends, potentially leading to non-payers or people asking for refunds.
4. Chip Chat Auctions - Doug Saito holds an auction a few times a year.  Normally it focuses on higher end chips, but I've seen lower value stuff as well.  Doug's a straight up guy and can give you the lowdown on whether your stuff is worthy of his auctions and how it works from the seller side (I've only been a buyer).  Catalogs are sent by mail.  First one's usually free.  Bid to get next one free. He can be reached at dsaito2@cox.net.  Tell him Barry sent ya!
5. CCA Convention - If you have a significant number of items, you can't find a better venue than having a dealer table at the CCA convention in Las Vegas each June.  Spread out your wares and sell (or trade) directly at the show.  If you don't have that many items, you can share a table with someone else.  Show information is here https://ccgtcc.com/events/convention/index.aspx.  Scroll down to find the dealer contract.  Space is limited so reserve your space before they run out.
6. DO NOT LIST YOUR ITEMS ON THIS MESSAGE BOARD.  The CCA specifically prohibited from allowing buying/selling within the club's framework.  If you try, busybody admins like me will delete your posts and/or kick you off the boards for repeated offenses.

I hope that helps.

P.S. Please consider joining the CCA.  It's only $40 and you'll get more access to these boards (restricted sections for members only), a quarterly full size glossy magazine with great articles, voting rights, bragging rights, a genuwine membership number, accolades from your peers, and much, much more (sorry, steak knives not available with this offer).  To sign up, visit https://ccgtcc.com/membership/index.aspx

Barry certainly hit on many of the ways to sell casino collectibles.
Another possibility is joining the various casino collectors groups on FaceBook.
Although I've never purchased from anyone on FaceBook, I know others have.
But, as Barry mentioned earlier, "You don't know them and they don't know you.  Act accordingly."

I collect Wisconsin and Elko chips.
Trading is favorable (In your favor) 👍 if you have anything I can add to my collection. I have many chips, Keys, TITOs, slot cards, ashtrays, tokens, dice, + other items to trade.
